Creamy Cream of Wheat Squares

This easy little dessert is delicate and delicious. It needs to soften overnight, so make it after dinner one night, cover it with drum-tight plastic wrap, and put it in the fridge. In the morning when you go to open up your fridge you will see it there, waiting, and all you need to do now is make a cup of tea. It’s the perfect breakfast. Wait till you try it, you won’t believe how good it is. Make sure to refrigerate any leftovers.

Cream of Wheat Squares

Ingredients
  • 2 cups milk
  • ½ cup cream of wheat (hot cereal)
  • ¾ cup butter, softened
  • ¾ cup sugar
  • 1 tsp vanilla
  • graham crackers (one full box)
  • Cream cheese (4 oz) softened
  • 2 T butter, softened
  • ½ tsp vanilla
  • 2 cups Confectioners' Sugar
Instructions
  1. Prepare the Cream of Wheat by bringing the milk to almost boiling in a medium sized pot. Add the cream of wheat in a slow, steady stream while stirring (so that it won't get lumpy). Turn heat down a bit and stir until slightly thickened. Remove from the heat and allow to cool.
  2. Beat together butter, sugar and vanilla.
  3. Add the cooled cream of wheat and mix to combine.
  4. In a 9x13 pan, arrange a layer of graham crackers, covering the whole bottom of the pan.
  5. Top with a layer of half of the cream of wheat mixture.
  6. Top with another layer of graham crackers.
  7. Add the rest of the cream of wheat mixture.
  8. Top with a final layer of graham crackers.
  9. Now, to make the cream cheese icing, mix the softened cream cheese and butter in a mixer until smooth, add the vanilla, and then add the Confectioners' sugar and mix till blended.
  10. Spread this on the top of the graham cracker layer.
  11. Cover with drum-tight plastic wrap and refrigerate overnight (this gives the graham crackers time to soften).
